"Ingredients:


- 1 lb Italian sausage

- 1 onion, diced

- 3 cloves garlic, minced

- 1 (14.5 oz) can diced tomatoes

- 1 (8 oz) package of penne pasta

- 2 cups fresh spinach

- 1 cup heavy cream

- 1/2 cup grated Parmesan cheese

- Salt and pepper to taste

- 1 tablespoon olive oil


Directions:


1. Heat the olive oil in a large skillet over medium heat. Add the Italian sausage and cook until browned. Remove the sausage from the skillet and set aside.


2. In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.


3. Add the can of diced tomatoes (with juice) to the skillet. Bring the mixture to a simmer and let it cook for about 5 minutes.


4. In the meantime, cook the penne pasta according to the package instructions. Drain and set aside.


5. Add the spinach to the skillet and stir until it wilts. Add the cooked sausage back to the skillet.


6. Pour in the heavy cream and stir until the mixture is heated through. Add the cooked pasta and stir until it’s coated in the sauce.


7. Sprinkle the Parmesan cheese over the pasta and stir until it’s melted and the pasta is creamy.


8. Season with salt and pepper to taste. Serve hot.
