Directions:


To make the Caramelized Onions:


1. In a large skillet, melt the butter over medium heat.

2. Add the sliced onions, salt, and pepper. Cook, stirring occasionally, until the onions are soft and golden brown, about 15-20 minutes.

3. Add the white wine and cook until evaporated. Set aside to cool.


To make the Tartlets:


1. Preheat your oven to 400 degrees F (200 degrees C) and line a baking sheet with parchment paper.

2. Roll out the puff pastry on a lightly floured surface and cut into 3-inch squares.

3. Place the squares onto the prepared baking sheet.

4. In the center of each square, spoon about a tablespoon of caramelized onions.

5. Top each with a generous amount of gruyere cheese.

6. Fold the corners of each square toward the center to form a tartlet.

7. Beat the egg with a tablespoon of water and brush the egg wash over the puff pastry.

8. Bake for 15-20 minutes, or until the pastry is golden brown and the cheese is bubbly.

9. Allow to cool for a few minutes before serving.
