- 1 lb Italian sausage

- 1 large zucchini, sliced

- 1 medium onion, chopped

- 1 bell pepper, chopped

- 1 (14.5 oz) can diced tomatoes

- 1/2 teaspoon dried oregano

- 1/2 teaspoon dried basil

- 1/2 cup grated Parmesan cheese


Directions:


1. In a large skillet, cook the Italian sausage over medium heat until browned and no longer pink. Remove the sausage from the skillet and set aside.


2. In the same skillet, add the sliced zucchini, chopped onion, and bell pepper. Cook for about 5 minutes until the vegetables are tender.


3. Add the minced garlic to the skillet and cook for another 1-2 minutes.


4. Return the cooked sausage to the skillet. Add the diced tomatoes, salt, black pepper, dried oregano, and dried basil. Stir well to combine.


5. Reduce the heat to low, cover the skillet, and let it simmer for about 10 minutes.


6. Just before serving, sprinkle the grated Parmesan cheese over the top of the skillet.
