Directions:

4. Place the racks of lamb in a roasting pan, bone side down. Roast in the preheated oven for about 20-25 minutes for medium-rare or until a meat thermometer inserted into the thickest part of the meat reads 145°F (63°C).


5. While the lamb is roasting, prepare the balsamic glaze. In a small saucepan, combine balsamic vinegar and honey. Simmer over medium heat until the mixture reduces by half. Stir in unsalted butter until fully incorporated. 


6. Once the lamb is cooked to your prefered doneness, remove it from the oven and let it rest for 5-10 minutes before slicing. 


7. Drizzle the balsamic glaze over the sliced lamb before serving.
