"Ingredients:


- 1 lb chicken breast, thinly sliced

- 2 tablespoons sesame oil

- 1 red bell pepper, sliced

- 1 green bell pepper, sliced

- 1 yellow bell pepper, sliced

- 2 cloves garlic, minced

- 1 onion, sliced

- 1 carrot, sliced

- 3 green onions, chopped

- 1 tablespoon fresh ginger, minced

- 1/2 cup unsalted dry roasted peanuts

- 1/4 cup soy sauce

- 2 tablespoons rice vinegar

- 2 tablespoons hoisin sauce

- 1 tablespoon chili paste

- 1 tablespoon cornstarch, dissolved in 1 tablespoon water

- 1/2 teaspoon red pepper flakes


Directions:


1. Heat 1 tablespoon of sesame oil in a wok or large skillet over medium-high heat.

2. Add the chicken and stir-fry until it is fully cooked. Remove it from the pan and set it aside.

3. In the same pan, add the remaining sesame oil. Add the bell peppers, garlic, onion, carrot, and green onions. Stir-fry the vegetables until they are tender.

4. Add the ginger and peanuts to the pan and stir-fry for another minute.

5. In a small bowl, combine the soy sauce, rice vinegar, hoisin sauce, chili paste, cornstarch mixture and red pepper flakes. Stir until it is well combined.

6. Return the chicken to the pan. Add the sauce and stir until the ingredients are well coated and the sauce has thickened.

7. Serve the stir-fry hot with steamed rice.
