"Ingredients:


For the Steak:


- 4 sirloin steaks (6 ounces each)

- 2 tablespoons olive oil

- Salt and pepper to taste

- 2 tablespoons unsalted butter

- 2 cloves garlic, minced

- 1 tablespoon fresh rosemary, chopped


For the Frites:


- 4 large russet potatoes

- Vegetable oil for frying

- Salt to taste


Directions:


1. Preheat your oven to 200 degrees F (95 degrees C) and prepare a baking sheet with a cooling rack on top.


2. Start with the Frites: Peel and cut the potatoes into 1/4 inch thick sticks. Rinse them under cold water, then pat dry thoroughly.


3. In a deep fryer or large, deep saucepan, heat the vegetable oil to 300 degrees F (150 degrees C). Carefully add the potatoes and fry for about 5 minutes, or until soft and a light golden color. Remove with a slotted spoon and drain on paper towels.


4. Increase the oil temperature to 375 degrees F (190 degrees C). Return the par-cooked fries to the oil and cook until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels, then season with salt. Keep warm in the preheated oven while you cook the steak.


5. For the Steak: Season both sides of the steaks with salt and pepper. Heat the olive oil in a large skillet over high heat until smoking. Add the steaks and cook for about 3-4 minutes on each side for medium-rare.


6. Remove the steaks from the skillet and let them rest. In the same skillet, reduce heat to medium, add the butter, garlic, and rosemary, and cook until the butter is melted and the garlic is fragrant.


7. Return the steaks to the skillet and coat them with the garlic-rosemary butter. Serve immediately with the warm fries.


Cooking Time:


Preparation time is around 20 minutes, cooking time is approximately 30 minutes.
