"Ingredients:


- 1 whole chicken, cut into pieces

- 1/4 cup of olive oil

- Salt and pepper to taste

- 2 onions, chopped

- 2 carrots, chopped

- 3 cloves of garlic, minced

- 2 cups of red wine

- 2 cups of chicken broth

- 2 bay leaves

- 2 sprigs of fresh thyme

- 1/2 pound of fresh mushrooms, sliced

- 1/4 cup of all-purpose flour

- 1/4 cup of water

- 2 tablespoons of butter


Directions:


1. Season the chicken pieces with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides. Remove from the skillet and set aside.

2. In the same skillet, add the onions, carrots, and garlic. Cook until the vegetables are softened.

3. Add the red wine, chicken broth, bay leaves, and thyme to the skillet. Bring to a boil. Return the chicken pieces to the skillet.

4. Cover and reduce heat to low. Simmer for about 2 hours, or until the chicken is tender.

5. In a separate skillet, melt the butter. Add the mushrooms and cook until browned. Remove from heat and set aside.

6. In a small bowl, mix together the flour and water until smooth. Gradually stir this into the skillet with the chicken. Cook and stir until the sauce is thickened.

7. Stir in the cooked mushrooms. Cook for an additional 5 minutes, or until heated through.
