- 2 pounds of fresh carrots, peeled and cut into 2-inch pieces
- 1/4 cup lavender honey (if you can't find lavender honey, you can use regular honey with 1/4 teaspoon of culinary lavender)
- 2 tablespoons of extra virgin olive oil
- 1/2 teaspoon of sea salt
- 1/4 teaspoon of freshly ground black pepper
- Fresh lavender flowers for garnish (optional)
Directions:
1. Preheat your oven to 400°F (200°C).
2. Place the carrots in a large mixing bowl. Drizzle with the lavender honey and olive oil. Sprinkle with salt and pepper.
3. Toss everything together until the carrots are well coated.
4. Spread the carrots out on a large baking sheet in a single layer.
5. Roast in the preheated oven for about 30 minutes, or until the carrots are tender and start to caramelize at the edges. Stir once or twice during cooking to ensure even roasting.
6. Remove from the oven and let cool slightly before serving.
7. Garnish with fresh lavender flowers if desired.
