Directions:


1. Preheat the oven to 375 degrees F (190 degrees C).


2. Place the chicken breasts flat on your work surface. Use a sharp knife to cut a pocket into each breast, being careful not to cut all the way through.


3. In a bowl, combine the breadcrumbs, Parmesan cheese, Italian seasoning, basil, oregano, parsley, and minced garlic. Stir in the olive oil.


4. Season the chicken breasts with salt and pepper, inside and out. Stuff each chicken breast with the breadcrumb mixture, then sprinkle mozzarella cheese on top. Secure with toothpicks.


5. Place the stuffed chicken breasts on a baking sheet. Bake in the preheated oven for 30 minutes, or until the chicken is no longer pink in the center and the juices run clear.


6. Let the chicken rest for a few minutes before removing the toothpicks. Serve hot.
