- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced

- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 can (14.5 oz.) diced tomatoes
- 1/4 cup fresh parsley, chopped
Directions:
1. Heat the olive oil in a large skillet over medium heat. Add the sausage and cook until browned, about 5-7 minutes. If using links, remove from the pan and slice into rounds before returning to the pan.
2. Add the sliced bell peppers, onion, garlic, oregano, basil, salt, and pepper to the skillet. Stir to combine and cook until the vegetables are tender, about 10-12 minutes.
3. Stir in the diced tomatoes, with the juice, and the chopped parsley. Reduce the heat to low, cover the skillet, and let simmer for about 10 minutes.
