"Ingredients:
- 4 large zucchini
- 1 tablespoon olive oil
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, finely chopped
- 1 pound Italian sausage
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon Italian seasoning
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
Directions:
1. Preheat oven to 400 degrees F (200 degrees C).
2. Cut each zucchini in half lengthwise; scoop out pulp, leaving a 1/4-inch thick shell. Chop the scooped pulp.
3. Heat olive oil in a pan over medium-high heat. Add onion and cook until soft and translucent, about 5 minutes. Add garlic and cook for another minute.
4. Stir in bell pepper and chopped zucchini pulp; cook for 2 minutes.
5. Add Italian sausage to the pan. Cook and stir until browned and crumbly, 5 to 7 minutes; drain and discard grease.
6. Stir in salt, pepper, and Italian seasoning. Remove from heat and let cool slightly.
7. Stir Parmesan cheese into sausage mixture until well distributed. Spoon mixture into the hollowed zucchini. Sprinkle each with mozzarella cheese.
8. Arrange stuffed zucchini onto a baking sheet.
9. Bake in the preheated oven until cheese is melted and zucchini are tender, about 20 minutes.
