"Ingredients:
- 4 large bell peppers, any color
- 1 pound lean ground beef
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup cooked rice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Directions:
1. Preheat the oven to 350°F (175°C).
2. Cut off the tops of the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish.
3. In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is softened. Drain off any excess fat.
4. Stir in the diced tomatoes, rice, salt, pepper, and Italian seasoning. Simmer for 5 minutes.
5. Remove the skillet from the heat and stir in half of the mozzarella and the Parmesan.
6. Stuff the bell peppers with the beef mixture. Sprinkle the remaining mozzarella on top.
7. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for another 15-20 minutes, until the peppers are tender and the cheese is melted and slightly browned.
8. Let the peppers stand for a few minutes before serving.
