"Ingredients:
- 24 jumbo pasta shells
- 1 lb Italian sausage
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup ricotta cheese
- 1 egg
- 1 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh parsley
- 10 oz fresh spinach, chopped
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
Directions:
1. Preheat your oven to 375°F (190°C). Cook the pasta shells according to package instructions until they are al dente. Drain and set aside.
2. In a large skillet, cook the Italian sausage over medium heat until it is no longer pink. Add the onion and garlic, and continue to cook until the onion is translucent.
3. In a large bowl, combine the ricotta cheese, egg, half of the Parmesan cheese, salt, pepper, basil, parsley, and cooked spinach. Add the cooked sausage mixture and stir to combine.
4. Spread a thin layer of marinara sauce in the bottom of a 9x13 inch baking dish. Stuff each pasta shell with the sausage and cheese mixture, and place in the baking dish.
5. Pour the remaining marinara sauce over the top of the stuffed shells. Sprinkle with the remaining Parmesan cheese and the mozzarella cheese.
6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
