"Ingredients:

- 1 pound large shrimp, peeled and deveined

- Salt and pepper to taste

- 2 tablespoons olive oil

- 6 cloves garlic, minced

- 1/2 cup chicken broth

- 1/2 cup white wine

- Zest and juice of 1 lemon

- 1/2 cup unsalted butter

- 2 tablespoons chopped fresh parsley leaves

Directions:

1. Season shrimp with salt and pepper.

2. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook until pink, about 2-3 minutes on each side. Remove from skillet and set aside.

3. In the same skillet, add minced garlic and cook until fragrant, about 1 minute. Pour in chicken broth and white wine, bring to a simmer. Let it simmer until reduced by half, this should take about 5 minutes.

4. Stir in lemon zest, lemon juice, and butter. Cook until the butter has melted, stirring occasionally.

5. Return shrimp to the skillet, stirring to coat in the lemon garlic butter sauce. Cook for an additional 2-3 minutes, or until heated through. Sprinkle with fresh parsley before serving.

Cooking Tips:

- Use fresh lemon juice for the best flavor. The bottled kind just doesn't compare.

- Do not overcook the shrimp, as they can become rubbery. They only need a couple of minutes on each side.

- Pair this scampi with pasta or crusty bread to soak up all of the delicious sauce.

Unique Twist:

- For a spicy kick, add some crushed red pepper flakes to the sauce.

- If you're trying to cut back on carbs, serve this over zucchini noodles or cauliflower rice."
