"Ingredients:
- 6 large red or yellow onions, thinly sliced
- 3 cloves garlic, minced
- 4 cups of beef broth
- 2 cups of water
- 1 cup of dry red wine
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 1 baguette, sliced
- 2 cups of grated Gruyère cheese
- 3 tablespoons of unsalted butter
- 2 tablespoons of all-purpose flour
Directions:
1. Melt the butter over medium heat in a large soup pot.
2. Add onions and garlic to the pot, cook until onions are very tender and caramelized, about 25 minutes.
3. Stir in the flour until well blended.
4. Gradually add in the beef broth, water, wine, bay leaves, and thyme. Season with salt and pepper. Bring to a simmer and allow it to cook for about 30 minutes.
5. Preheat your oven broiler.
6. Arrange the baguette slices on a baking sheet and broil until crispy, about 1-2 minutes.
7. Discard the bay leaves from the soup and divide the soup into ovenproof bowls. Top each bowl with the toasted baguette slices and sprinkle generously with cheese.
8. Broil in the preheated oven until the cheese is bubbly and golden brown, about 2-3 minutes.
