"Ingredients:
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 4 tablespoons olive oil
- 4 tablespoons lemon juice
- 2 teaspoons dried oregano
- 2 cloves garlic, minced
- Zest of 1 lemon
- Salt and pepper to taste
- 1 red onion, cut into 1-inch pieces
- 1 bell pepper, cut into 1-inch pieces
- Lemon wedges, for garnish
- Metal or wooden skewers
Directions:
1. In a bowl, combine olive oil, lemon juice, oregano, minced garlic, lemon zest, salt, and pepper. Stir until well combined. This will serve as your marinade.
2. Add the chicken pieces to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 2 hours or overnight to allow the chicken to absorb the flavors.
3. Preheat your grill or grill pan over medium-high heat.
4. Thread the marinated chicken, onion, and bell pepper onto the skewers, alternating between each ingredient.
5. Grill the skewers for 7-8 minutes on each side or until the chicken is cooked through and has a nice char on it.
6. Serve the skewers hot with lemon wedges on the side.
