- 4 boneless, skinless chicken breasts

Directions:


1. Preheat oven to 375 degrees F (190 degrees C).

2. Cut a pocket into each chicken breast. Season each chicken breast with salt and pepper. 

3. In a bowl, combine the feta cheese, spinach, garlic, and oregano. Stuff each chicken breast with the spinach and feta mixture.

4. Heat olive oil in a large oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and cook until browned on both sides, about 5 minutes per side.

5. Add the chicken broth and lemon juice to the skillet. Transfer the skillet to the preheated oven.

6. Bake until the chicken is no longer pink in the center and the juices run clear, about 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

7. Allow the chicken to rest for a few minutes before serving.
