Directions:


1. Preheat your oven to 375°F (190°C).

2. Season the chicken thighs with salt and black pepper.

3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken, skin-side down, and sear until browned, about 5 minutes. Flip the chicken over and cook for another 5 minutes.

4. Remove the chicken from the skillet and set aside. In the same skillet, add the garlic and lemon zest and cook until fragrant, about 1 minute.

5. Add the chicken broth, lemon juice, olives, and half of the feta cheese to the skillet and stir to combine.

6. Return the chicken to the skillet, skin-side up. Sprinkle the remaining feta cheese on top of the chicken.

7. Transfer the skillet to the preheated oven and bake until the chicken is cooked through, about 25-30 minutes.

8. Sprinkle the cooked chicken with the chopped oregano and parsley before serving.
