Directions:


1. Preheat your oven to 400°F (200°C).

2. In a bowl, combine the minced garlic, olive oil, lemon juice, dried oregano, salt, and pepper. Mix well.

3. Place the chicken in a roasting pan. Rub the chicken inside and out with the garlic and olive oil mixture.

4. Stuff the cavity of the chicken with the sliced lemons.

5. Arrange the halved potatoes around the chicken in the roasting pan.

6. Roast the chicken in the preheated oven for about 1 hour and 20 minutes, or until the chicken is cooked through and the potatoes are tender. Baste the chicken and potatoes with the juices in the pan every 20 minutes.

7. Once cooked, remove the chicken from the oven and let it rest for 10 minutes before slicing.

8. Garnish with fresh oregano before serving.
