- 4 large bell peppers, tops cut off and seeded

- 1 lb ground beef

- 3/4 cup bread crumbs

- 1/4 cup chopped fresh parsley

- 2 cloves garlic, minced

- 1 egg

- 1 cup marinara sauce

- 1 cup shredded mozzarella cheese

- Salt and pepper to taste

- Olive oil for drizzling


Directions:


1. Preheat your oven to 375°F (190°C).

2. In a large bowl, combine the ground beef, bread crumbs, Parmesan, parsley, garlic, and egg. Mix until all ingredients are well incorporated.

3. Season the inside of the bell peppers with salt and pepper. Fill each pepper with the meatball mixture, pressing gently to ensure they are fully stuffed.

4. Place the stuffed peppers in a baking dish. Top each pepper with marinara sauce, then sprinkle with mozzarella cheese.

5. Drizzle a little olive oil over the peppers, then cover the baking dish with foil.

6. Bake for 30 minutes, then remove the foil and bake for an additional 15-20 minutes, or until the peppers are tender and the cheese is golden and bubbly.

7. Let the peppers rest for a few minutes before serving.
