5. Fry the eggplant slices in the hot oil until they are golden brown on each side. Once done, place them on a plate lined with paper towels to drain the excess oil.

6. Preheat your oven to 375°F (190°C). In a baking dish, spread a thin layer of marinara sauce, then place a layer of eggplant slices, followed by a sprinkle of mozzarella and Parmesan cheese. Repeat these layers until all ingredients are used, finishing with a layer of cheese on top.

7. Bake in the preheated oven for about 25 minutes, or until the cheese is bubbly and golden brown.

8. Let the eggplant Parmigiana rest for about 10 minutes before serving. Garnish with fresh basil leaves.
