- 2 1/4 cups of bread flour

- 2 tsp instant or rapid rise yeast

- 1 tsp salt

- 1 tbsp olive oil

- 1 cup warm water (110 degrees)


For the Toppings:


- 1 cup tomato sauce

- 2 large tomatoes, sliced

- 1 cup fresh mozzarella cheese, sliced

- 1 handful of fresh basil leaves

- Olive oil, for drizzling

- Salt and pepper, to taste


Directions:


1. Start by preparing the dough. In a large mixing bowl, combine the bread flour, yeast, and salt. Pour in the warm water and olive oil. 


2. Use a wooden spoon to mix the ingredients together until a shaggy dough forms. Transfer the dough onto a lightly floured surface and knead it for about 5 minutes until it becomes smooth and elastic.


3. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 to 1.5 hours or until it doubles in size.


4. After the dough has risen, preheat your oven to 500°F (260°C) and place a pizza stone or baking sheet in the oven to heat.


5. Punch down the dough to release the air and divide it into 2 equal parts. Roll out each part into a 12-inch round on a piece of parchment paper.


6. Spread half of the tomato sauce over each pizza base, leaving a small border around the edges for the crust. Arrange the sliced tomatoes and mozzarella evenly over the sauce.


7. Carefully transfer the pizza (still on the parchment paper) onto the preheated pizza stone or baking sheet in the oven. Bake for about 10-12 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.


8. Remove the pizza from the oven and immediately top it with fresh basil leaves. Drizzle with a bit of olive oil and season with salt and pepper to taste.


9. Repeat the process with the second pizza.


10. Slice and serve warm.
