"Ingredients:

- 2 large chicken breasts, cut into bite-sized pieces

- 2 cups of risotto rice

- 1 onion, finely chopped

- 4 cloves garlic, minced

- 1 cup of white wine

- 4 cups of chicken stock

- 2 cups of sliced mushrooms

- 1 cup of grated Parmesan cheese

- 1 cup of heavy cream

- 3 tablespoons of olive oil

- Salt and pepper to taste

- Fresh parsley for garnishing

Directions:

1. Heat the olive oil in a large saucepan over medium heat. Add the chicken pieces and cook until golden brown. Season with salt and pepper, then remove the chicken from the pan and set aside.

2. In the same pan, add the onion and garlic. Sauté until the onions become translucent. Add the mushrooms and cook until they are browned and tender.

3. Add the risotto rice to the pan and stir well to coat the grains in the oil. Toast the rice for a couple of minutes until it starts to become translucent around the edges.

4. Pour in the white wine, stirring constantly until it is fully absorbed by the rice.

5. Gradually add the chicken stock, one cup at a time, stirring constantly. Wait until each addition is almost completely absorbed before adding the next. This process should take about 20 minutes.

6. Return the cooked chicken to the pan and stir well. Add the Parmesan cheese and heavy cream, stirring until everything is well combined and creamy.

7. Season with additional salt and pepper if needed. Serve the risotto hot, garnished with fresh parsley.
